Halloween



What a great Halloween had by all. The Boys and I (yes, that does include hubs)...hung out all day yesterday. We rested our selves up for our late afternoon activities. I spent most of the day making sure everyone had enough protien throught the day. I did not want to have empty tummies filled with sugar. I made the yummiest breakfast burritos ever! My sister loves to make breakfast burritos and she told me how she made them one time. I have since made them, but added a few of my own touches here and there. The boys scarfed them down, I think they had 2 each. Here is how I make them:

Breakfast Burritos

1 egg per person (I used 5 eggs, even though there are 4 of us).
1/2 cup chorizo (I buy a package and split it up in three baggies, you really do not need much).
1 portobello mushroom, sliced length wise (you can use whatever kind of mushrooms you have on hand).
3 sweet peppers, diced (we do not like super spicey, you can use whatever peppers you like).
1/3 c. red onion, chopped fine
*here is my secret, cilantro pesto (you can make it yourself or pick a small container at Whole Foods)
pinch of herbed salt (I will post that recipe sometime, I have made this for Christmas gifts and it is always a huge hit)
pinch of pepper
Tortillas
Cheese (shredded)
Salsa

1. Break eggs into a bowl, whisk in 1 TBSP cilantro pesto, herbed s & p, set aside.

2. Chop mushroom, onion & peppers. Heat a medium sized skillet on medium heat (I always use my cast iron skillet passed down to me from Chris' grandma Sandusky, it always makes me smile when I use it). 

3. Saute all veggies, add chorizo.

4. Now add the egg mixture cook alltogether.

5. When eggs are finished set aside. Heat a clean skillet, warm tortillas, add egg mixture, top with cheese and choice of salsa, roll up and voila! The best Breakfast Burrito ever!

Sorry, no pictures. I need to get better about taking pictures to add to my posts. However, I am not always sure exactly what I am going to write about. When I actually start my post I realize that I do not have a picture to go along with my story. The other thing is, I really want a better camera than the little point and shoot that I have. Lately, every picture I take is a reminder how badly I want I new camera. *sigh*

In any event, we all had a nice afternoon rest. When I told Jettson that it was time to get ready for our Halloween party he nearly flew down the stairs and was shaking with excitement. The boys got their costumes on and so did mom and dad.  We went with the policeman/inmate theme this year. We then headed to Scotts Valley for the Matty's annual Halloween Party in the Vineyards. We started off with a neighborhood parade led by a neighbor who happens to be a Santa Cruz County Sheriff. He turned on his lights and siren, the kids absolutely loved it. We circled the neighborhood ,which led us back to the Matty's house where a gourmet hot dog buffet awaited us. Again, no pics :( Rick Matty did such an awesome job. Each station had a sign that told you how to fix a Chicago dog, for example. After our fine eats, we all grabbed our signature red plastic cups, filled up on adult beverages, and headed out with our Trick or Treaters.

Due to the time change this year we kept our night a little shorter than in years past. We got home at 11:30 p.m. crawled into bed and we were all passed out by midnight.

Thankfully, the boys slept in until after 9 a.m. which was actually 8 a.m. We were all rested. Daddy made us breakfast. Just simple eggs and toast (daddy had the last of the Breakfast Burrito mentioned earlier in this post). Today was another busy day. A trip to Home Depot and the grocery store. Our friend and neighbor, Stevie's birthday was today. I made her dinner (Clams and Angel Hair Pasta) and her favorite birthday cake, Pumpkin Spice Cake (I actually made it from Romney Steele's Cookbook, "My Nepenthe"). Jettson helped in the preparations. He made Stevie a birthday card (he drew the Pumpkin King from "The Nightmare Before Christmas" which happens to be one of Stevie's favorite movies as it is ours).


I have no idea why he wanted to make a scary face? He got the string and the flowers. I helped with the string, but the rest was all his creation. He even laid out the napkin.
This is our friend Stevie. Jettson sang Happy Birthday to her. He is such a doll. She asked him whose birthday is tomorrow? He said "MINE!" He was so happy to celebrate Stevie's birthday. He never once asked about his.


Um, you can see where Owen got his little hands on the cake. He kept saying "mmmm...cake," and just when no one was looking he was licking off all the icing.

Whew! As soon as that was wrapped up I then started cupcakes for Jett to take to his class tomorrow. Tomorrow is Jettson's 6th Birthday!! I managed to clean up, make 24 cupcakes, wrap books for Jettson to give to his class and finish up this post that I have been working on since this morning. And if that does not sound like I did enough today...I even managed to get all the Halloween decorations packed up and got out all my Thanksgiving/Fall decorations out! Don;t get too excited, I am not always like this...I have been greaing up for this for the past few weeks. I knew that it was going to be like this...one event after the other. I have planning for this and knew exactly what I was going to do and when I was going to do it.

I had better wrap this up...I have a crazy, busy week ahead. I am getting ready to leave for New Mexico on Thursday for a 4 day trip. At the end of a long day when I sit down and finally put my feet up, hubs always says "you love it this way" and he's right, I do.
