In any event, I do like to try my hand at baking every once in awhile. The recipe is not an original. I went to All Recipes one of my "go to" site for recipes. The only thing I did different was use pumpkin pie spice, hence the reason I changed the title to Pumpkin Pie Spice Cookies.
Mixing the batter in my KitchenAid.
Finished product. This is how they are suppose to look. They are cakey.
My dear friend, Regina is in the hospital. She is 32 weeks pregnant with her second baby (a boy). Her water broke a few days ago. She is on bed rest for at least 2-3 weeks. She is well and baby is doing well. I have been trying to go and see her when I can. Having to be on bed rest, in a hospital no less, when you have a 3 1/2 year old and a CHP hubs is rather taxing. Regina would much rather be at home with her darling "boys" nesting away. I took the above plate of cookies and a bag of DVD's to her last night. Something sweet to eat and movies for distraction, not to mention bringing along my chatty self to help the evening go by a lot quicker.
We had fun eating cookies, drinking Peet's coffee and talking shop (which for us is all things knitting, cooking, motherhood and wherever else our creative minds might take us). My friend Regina is such a burst of inspiration for me. She is such a loving, creative, caring, wonderful, beautiful person that to be around her, even in such a setting as a hospital, is truly a gift. I know that no matter what happens, in a few months time we will be sitting around with babes in arms talking about our "fun" time in the hospital and about Pumpkin Pie Spice Cookies. Regina reminded me, that about this time last year, I had made some other pumpkin concoction and had bestowed it's goodness upon her. I am beginning to wonder if it is the pumpkin that keeps bringing us together?
In any event, today has been a lot of hustle and bustle. I have been getting ready for Jettson's 6th Birthday party that is taking place tomorrow. Which meant trips to the Dollar Tree, Sears and the grocery store. I finally, have it somewhat under control. This year we are combining Jett's and Audra Herrin's b~day parties together. It makes it so much easier.
Owen has been all kinds of funny today. It started with the morning. He asked me for a "cukcake" as he calls them and went on to him parroting things like, "mama, 'top it, I gonna git 'pakin' 'poon, 'aughty, mama!" Um...I think that, I have to change some of the comments that...um, I have been making because it seems to be back firing on me. While we were in Sears Owen saw Spongebob Square Pants and his side kick Patrick. As soon as he spotted them he started singing the song at the top of his lungs. It was another one of those "uh, oh" moments and I ever so softly, started singing "A-B-C-D..." He is so much more percocious than Jettson was at this age. I have to really watch everything that I say and do. Otherwise, I am afraid I am going to be getting lots of looks and stares.
Owen is singing..."Aye, Aye Captain, Oh, Who lives in a Pineapple under the sea?"
"Wook, mama, Paptrick!"
Please, don't judge me....it is scary, I know. The good news is, he would rather sit with me and read books than watch tv anyday ;)
